Dijon Lamb Ribs

Serves 2-3 people

Serve these ribs with your favorite couscous or rice and roasted tomatoes and garlic.

Ingredients

  • 2 lbs. lamb ribs
  • ½ c. olive oil
  • 1 tbsp. lemon juice
  • 1 tbsp. Dijon mustard
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. thyme

Remove the thin flap of meat from the backside of the rib section. Separate ribs into 1-2 bone segments. In a large pan or plastic bag, mix the remaining ingredients. Add lamb rib pieces and allow them to marinate for an hour. Preheat grill or 400° F oven. Grill or roast ribs until meat is no longer pink and begins to pull away from the bone.
